Terp to Table presents: Terp Your Veggies


As the summer heat ramps up, enjoy this healthy, delicious, refreshing salad with a Grapefruit Vinaigrette fortified with our Grapefruit Kush terpene blend.

Here are your ingredients:

For the Salad

  • 1 small watermelon radish
  • 1 cup kumato tomatoes,
  • 1 cup baby heirloom tomatoes
  • 1 red pepper
  • 1 green pepper
  • 3 Persian cucumbers
  • 1/8 cup each  kalamata and castlevetrano olives
  • 1 small red onion
  • 1 tsp sumac powder
  • Kosher Salt and pepper to taste

For the Grapefruit Kush Vinaigrette

  • 2 oz grapefruit juice
  • 1 oz olive oil
  • 2 drops Grapefruit Kush terpenes
  • 1/2 tsp dijonn mustard
  • 1/2 tsp sumac
  • 1/2 tsp honey
  • Salt and pepper to taste

For Garnish

  • 4-5 mint leaves
  • 2 Tbs feta cheese
  • 1 tsp sumac powder

And the method: 

  1. Cut all vegetables to sizes  you're happy with
  2. Make your vinaigrette by putting all ingredients into a small mason jar and shaking like crazy.
  3. Combine vet in a large mixing bowl.
  4. Dress with vinaigrette and adjust your seasoning.
  5. Garnish with torn mint, feta and sumac.
  6. Enjoy!

 Looking at that list of ingredients may make this recipe seem a trifle daunting; but fear not! The beauty of this recipe is that all the ingredients are raw - there's no cooking involved. Your only job is to select the most beautiful, delicious vegetables you can, and then let them speak simply and boldly for themselves. 

 

Powerful Perks

  Cucumbers can aid in weight-loss. Radishes are a great source of vitamin C. Red Bell Peppers, in addition, contain more than 200% of your daily vitamin C intake! Olives are packed with vitamin E and other powerful antioxidants. Tomatoes too, being packed with lycopene, are another major dietary source of antioxidants. The onions not only support healthy digestion, but they also elevate the nutritional efficacy of the tomatoes in the recipe! Even the sumac acts as an anti-microbial and anti-fungal spice, which can help with skin inflammation. It's also been shown to be effective in regulating cholesterol and reducing blood sugar. 

These powerful perks are not unique to this specific set of vegetables. Any and all vegetables, fruits, nuts and fungi have their own elaborate matrix of valuable vitamins, nutrients and minerals. When we ingest them whole (as opposed to juices), and as nature intended them, we are consuming a carefully designed delivery system of dietary power-houses.

Select things that look beautiful, sound interesting, or taste delicious. This veggie salad is your canvas you can paint it with whatever want. We've all heard "eat your colors" and this recipe allows us to do just that.

A Note on the Vinaigrette

Grapefruit is a true spectacle of nature. When incorporated in our diets they can benefit our immune system, promote appetite control, improve heart health and they're high in anti-oxidants. Importantly here, in this recipe, the flavor of grapefruit really goes a long way in contrasting with and complimenting the flavor of the raw vegetables. Sweet, sour, and slightly bitter, grapefruit alone can hit 3 out of 5 of our flavor receptors (our tastebuds also pick up salty and umami, or savoriness).
