Ice Cream Cake is a cross of Wedding Cake and Gelato #33, bred by Seed Junky Genetics.² The pairing places it firmly within the Cookies-Gelato family tree that dominates California's modern dessert strains. That lineage is also why the Ice Cream Cake aroma is both lightly gassy and bakery-sweet.

Wedding Cake (Triangle Kush x Animal Mints) is the doughy, vanilla-leaning half of this cross. It's known for dense resin production and a rich, tangy sweetness that shows up across most of its descendants. 

The Gelato #33 strain (Sunset Sherbet x Thin Mint GSC) contributes a creamier, more herbal-mint complexity tied back to the original Cookies line. It also contributes to the deep purple pigmentation visible in Ice Cream Cake's flower.

Ice Cream Cake: Aroma & Flavor Profile

The Ice Cream Cake strain’s dominant aromatic character is delicate citrus over a doughy, nutty base, with a floral sweetness that pulls the profile toward vanilla and pastry rather than straight citrus or fuel. It reads bright on top, soft in the middle, and carries enough weight underneath to land as dessert rather than diesel.

Dominant terpene d-Limonene supplies the citrus lift at the top of Ice Cream Cake’s profile. Found naturally in citrus fruit rinds, Limonene contributes a zest that keeps the profile from reading as flat or overly dense, consistent with the citrus-forward influence Gelato #33 carries into the cross.

The earthy, doughy middle and base aromas anchoring the profile come, in part, from beta-Myrcene. Present in ripe mangoes, hops, and lemongrass, Myrcene helps create the rounded, cake-batter flavor that traces back to Wedding Cake's side of the lineage.

We can't attribute all of Ice Cream Cake's flavor and aroma to terpenes alone, though. Our research into the broader Gelato family has identified flavorants, specifically senecioate esters, in sweet-exotic varieties sharing Gelato #33's lineage. More analysis is needed to confirm whether these compounds are present in Ice Cream Cake, but the shared Gelato #33 lineage makes it a reasonable candidate for future testing.

According to data from BDSA, Ice Cream Cake's share of California flower sales did decline over that period, from 1.1% in Q1 2021 to 0.3% in Q1 2023, but that drop tracks closely with a 20% increase in the number of "cake"-named strains entering the California market over the same window. Rather than losing ground to shifting consumer taste, Ice Cream Cake's descendants and adjacent dessert cultivars essentially split the category it helped establish.

The Ice Cream Cake strain also exists at an interesting point relative to the Candy Gas category its own lineage helped popularize. Its parentage connects it to the same cross that produced Bacio Gelato, but Gelato #33 is a distinct phenotype from that lineage and it hasn’t been confirmed to carry the senecioate esters that define Candy Gas chemistry. Ice Cream Cake’s gassy quality is also notably more moderate than confirmed Candy Gas cultivars like Bacio Gelato or Runtz OG. This makes Ice Cream Cake an appealing choice for consumers that want the sweet character associated with Candy Gas strains without the full gassy intensity.
