Gelatti is a dessert weed strain with an aroma profile that earns its place in the Candy Gas category. It’s delicately gassy and sweet, with the earthy cookie depth you'd expect from a cultivar with such strong Cookies genetics. As a cross of Bacio Gelato and Biscotti, its parentage includes two of California's most recognized cultivars, and that genetic credibility translates directly to shelf appeal and product positioning.
For cannabis formulators, Gelatti offers a sweet-gas profile with proven consumer recognition, a name that carries weight in markets where Cookies genetics move product, and an aromatic character that works across vapes, infused pre-rolls, and edibles.
Learn more about the chemistry, Terplytics data, and formulation opportunities behind the Gelatti strain.
The name is obviously a reference to its delicious genetics, but it’s also a decent indicator of Gelatti’s unique flavor and aroma… to an extent. Notes of sweet and sour berries mingle with earthy cookies, but it’s the minty/menthol and potent blast of diesel fuel that take Gelatti to an entirely new level of dank.
None of this would be possible, however, without its unique combination of aromatic compounds, such as dominant terpenes d-Limonene, α-Pinene, and β-Myrcene.
Dominant terpene d-Limonene provides a citrus brightness at the top of Gelatti’s aroma. Found naturally in citrus fruit rinds, Limonene contributes a zesty quality that keeps the earthy, cookie character from reading as flat or overly sweet.
While beta-Pinene and alpha-Pinene are similar, Gelatti is more dominant in alpha-Pinene. Both are commonly found in conifer trees like pine, but alpha-Pinene is also found in rosemary, eucalyptus, and orange peel. Not surprisingly, its scent is herbal and woody with a slight cooling camphoraceous effect.
Finally, beta-Myrcene can be sourced from many botanicals, including mangoes, lemongrass, hops, basil, and more. It smells earthy and woody with distinct notes of cardamom, fruit, and musk.
The next compound we have to mention is NOT a terpene, but its aromatic influence is substantial. We’re talking about Prenylated Cannasulfur Compounds (PCSCs) and these flavorants are responsible for the gassy or diesel-like aromas in Gelatti. Bacio has the most of any cultivar we’ve measured with a machine-wrecking Gas Factor of 103% (we literally had to recalibrate our equipment to properly measure it). So, in Gelatti’s case, it likely inherited a good portion of its gassy compounds from Bacio Gelato.

With our recent flavorant discoveries, we’ve begun identifying more nuanced compounds like isopropyl butyrate and isobutyl hexanoate. These sweet esters were identified early in our analysis of fruity strains like Papaya, and we’re still studying whether they play a role in Gelatti’s unique sweet aroma.
Our analysis of Gelatti was performed on cannabis flower using two-dimensional gas chromatography (GCxGC-TOF-MS/FID/SCD), the same advanced methodology used across the Science of Exotic Cannabis research series.¹
Our proprietary Terplytics system is the next generation of cannabis analytics. It allows us to deliver the most advanced botanical testing for exploratory research, sensory quantification, strain validation, product development, and consumer insights. It’s also how we developed the Loud Factor and the Gas Factor.
GELATTI TERPLYTICS
LOUD FACTOR - 86%
GAS FACTOR - 78%
The Loud Factor quantifies the pungency or “loudness” of a strain. Unlike Total Aromatics by Weight, the Loud Factor assigns scores to individual compounds based on their pungency. This is important for aromatic compounds like flavorants that are incredibly pungent.
The Gas Factor measures the intensity of a profile’s gassy aroma. So, the higher the Gas Factor, the gassier the profile. Simple, right? While that’s technically accurate, it’s not the whole picture. Our scores are logarithmic, so there’s a HUGE difference between a Gas Factor of 96% and 100%. Plus, similar to the Loud Factor, it involves more than counting aromatics by weight since flavorants like Skatole and Indole significantly influence aroma even if only present in parts per trillion.
With a Gas Factor of 78%, Gelatti sits at the more accessible end of the Candy Gas spectrum. This makes it meaningfully gassy, but short of the intensity of a profile like Bacio Gelato at 103%.
It’s also worth noting that our Terplytics numbers have nothing to do with quality. A cultivar that has a 100% Haze Factor, for example, isn’t objectively better than a cultivar with a 0% Haze Factor. It just means that one is very hazy, and another isn’t.
For consumers with specific preferences, Terplytics can be immensely helpful for finding the right products!
With a Gas Factor of 78%, a Loud Factor of 86%, and a dessert-forward aroma anchored by gas and cookie-earthy depth, Gelatti works well across several product formats.
Vapes are a strong fit for Gelatti. D-Limonene and alpha-Pinene both volatilize at standard vape temperatures, so the citrus and minty-herbal top notes will be immediately present on the first inhale. The PCSC-driven gas character follows behind them, giving the experience depth without losing the dessert sweetness.
Infused pre-rolls benefit from Gelatti's Loud Factor. Consumers smell a pre-roll before they smoke it, and a profile this loud will announce itself the moment they open the package. The combination of dank cannasulfurs and sweet berry notes will resonate with connoisseurs shopping for a gassy dessert experience.
Gummies and edibles are a natural fit for Gelatti's sweet berry and cookie character. The ester-driven sweetness in profiles like this integrates well with confectionery base formulations, and the Cookies lineage gives brands a recognizable name to build packaging and marketing stories around.
Infused beverages, particularly sparkling formats, can work for Gelatti's citrus top notes. The brightness from d-Limonene pairs naturally with fruit-forward beverage formulations. While the earthier cookie and gas notes are less prominent in this format than in inhalables, it creates unique pairing opportunities with botanical flavors that may complement and/or emphasize those notes.
The Gelatti profile is distinct enough to stand out on a crowded menu while remaining accessible to consumers who don't typically shop for high-intensity gas profiles. For formulators, that range is the asset.
Blending Gelatti with terpene isolates, terpene blends, or other profiles allows formulators to create custom flavor and aroma experiences that serve a broad range of consumer segments and brand propositions.
Adding a minty or cooling terpene isolate like l-Menthol can sharpen the herbal, camphoraceous top notes already present in Gelatti. This works particularly well in vapes, where that cooling quality comes across as clean and distinct.
Formulators also have the option of blending Gelatti with candy, fruit, soda, or even confectionary aromas to create entirely new experiences. Blending it with a Cloudburst flavor like Marshmallow Puff or Peachberry Pear can amplify its dessert character while giving brands a flavor story that's distinct from other Candy Gas profiles on the market.
For brands whose product lineup skews toward heavier gas, pairing Gelatti with a Chem Gas profile like Sans Souci or an OG Gas profile like Dynasty OG will push the gas intensity up while the dessert and berry notes from Gelatti keep the blend from being overwhelmingly gassy. It's a way to introduce Gelatti's sweetness to consumers who already shop for pungency without asking them to ditch the intensity they like.

Standard terpene panels capture 30 to 50 compounds. Our GCxGC-TOF-MS/FID/SCD analysis captures over 400, including the trace cannasulfur compounds that drive Gelatti's gas character and the flavorants that give it dessert depth. A generic terpene blend can't replicate that.

Gelatti is a terpy cross of two California favorites: Gelato and Biscotti. The profile leans into its heritage and serves up rich camphorous, earthy notes with a heavy helping of dank, floral berries. It's unique, to say the least.
Traditionally, a biscotti is a delicious Italian almond biscuit. As such, enjoying this blend results in a sensation not unlike biting into one of these rich, nutty pastries. A palpable spice is deliciously noticeable on the exhale.
Out of the tens of thousands of cultivars we’ve analyzed, Bacio Gelato reigns supreme as the gassiest strain ever measured. Created in partnership with Mario Guzman of Sherbinskis, this is the world’s only authentic and official Gelato terpene profile.
The diabolical descendant of OG Kush and Durban Poison, Girl Scout Cookies isn’t as innocent as its namesake. The aroma is dessert-like with floral notes, sweet citrus, and a touch of earthy goodness… but don’t be fooled. These terps mean business.
Mint flavors always have a strange cooling sensation associated with them. That’s a byproduct of the terpene menthol - which we specialize in. This blend is sure to set the senses tingling along a fresh, earthy current.
